Cocoa of Excellence: Unravelling and Celebra­ting Diverse Flavour Qualities of Cocoas to Promote Market Differentiation

The overall goal of the project is to contribute towards greater differentiation of cocoa markets through the identification of speciality cocoa origins (“terroirs”) with recognized or newly discovered flavour attributes. The project will collect cocoa liquor samples from different origins world-wide that show high flavour potential or interesting original new flavour attributes. These will be processed into chocolate and nominated for the “International Cocoa Awards” to be attributed by professionals on the occasion of the 2010 Salon du Chocolat of Paris. Additional project activities seek to establish this contest as an annually revolving event.
